Zesty Lemon Butter Shrimp Pasta

12 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 cloves garlic, minced

1 lemon, zested and juiced

½ cup chicken broth or white wine

1 cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

½ tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the shrimp, season with salt, pepper, and red pepper flakes, and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

      Create the Sauce: In the same skillet, pour in the chicken broth (or white wine) and bring to a simmer. Stir in the lemon juice and lemon zest, then add the remaining 2 tablespoons of butter. Let it melt and mix well to combine the flavors.

        Combine Pasta and Sauce: Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until slightly softened. Then, add the drained pasta and shrimp back into the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Garnish and Serve: Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve immediately, garnished with grated Parmesan cheese if desired.
