Zesty Lime Chicken Bowls

Ingredients
  

4 boneless, skinless chicken thighs

2 tablespoons olive oil

Zest and juice of 2 limes

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup quinoa, rinsed

2 cups vegetable or chicken broth

1 cup cherry tomatoes, halved

1 cup corn, fresh or frozen

1 can (15 oz) black beans, drained and rinsed

1 avocado, diced

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine the olive oil, lime zest, lime juice, minced garlic, cumin, paprika, chili powder, salt, and pepper. Add the chicken thighs and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes, up to overnight for maximum flavor.

      Cook the Quinoa:

        In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and has absorbed all the liquid. Remove from heat and let stand for 5 minutes, then fluff with a fork.

          Cook the Chicken:

            Preheat a grill or skillet over medium-high heat. Remove the chicken thighs from the marinade and grill or cook in the skillet for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully charred. Remove from heat and let rest for a couple of minutes before slicing.

              Prepare the Veggies:

                In a large mixing bowl, combine the cherry tomatoes, corn, and black beans. Toss them together with a sprinkle of salt and pepper.

                  Assemble the Bowls:

                    Start with a base of fluffy quinoa in each bowl. Top with sliced chicken, the cherry tomato and corn mixture, and diced avocado. Garnish with fresh cilantro and a lime wedge on the side for an extra zesty kick.
