1 lb boneless, skinless chicken breasts, diced

1 cup cooked jasmine rice

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons lime zest

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or agave syrup

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon vegetable oil

1 red bell pepper, diced

1/2 cup red onion, diced

1/2 cup chopped fresh cilantro

1 head of butter lettuce (or iceberg), leaves separated

1 avocado, sliced (for topping)

Sliced jalapeños (optional, for heat)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken, lime juice, lime zest, soy sauce, honey, garlic, ginger, cumin, salt, and pepper. Stir well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the marinated chicken (discard any remaining marinade) and cook for about 5-7 minutes, or until the chicken is cooked through and slightly browned.
