Cilantro is an essential component of these Zesty Lime Shrimp Street Tacos, providing a fresh, herbaceous note that elevates the overall flavor profile of the dish. This vibrant herb not only adds a pop of color but also complements the zesty lime and succulent shrimp beautifully. When incorporating cilantro into your salsa or as a garnish, be sure to use fresh leaves, as dried cilantro does not deliver the same bright flavor.

Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

Zest and juice of 2 limes

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

For the Avocado Salsa:

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeded and minced

Zest and juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Fresh cilantro leaves, for garnish

Radish slices, for garnish (optional)

Instructions

Marinate the Shrimp:

In a mixing bowl, combine the olive oil, lime zest, lime juice, minced garlic, smoked paprika, cumin, cayenne pepper, salt, and pepper. Add the shrimp, tossing to coat. Marinate for 15-30 minutes in the refrigerator.

      Prepare the Avocado Salsa:

While the shrimp marinates, in a separate bowl, combine diced avocado, red onion, tomato, jalapeño, lime zest, lime juice, cilantro, and a pinch of salt. Gently mix together to combine without mashing the avocado. Set aside.

          Cook the Shrimp:

Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from heat.

              Warm the Tortillas:

In the same skillet, warm the tortillas for about 20-30 seconds on each side, or until pliable. Alternatively, wrap them in foil and place them in a warm oven.

                  Assemble the Tacos:

On each tortilla, add a few pieces of cooked shrimp, a generous spoonful of avocado salsa, and garnish with fresh cilantro and radish slices if using.

                      Serve:

Serve your zesty lime shrimp street tacos with lime wedges on the side for added zest!
