Zucchini and Cheese Fritter Patties

2 medium zucchinis, grated

1 cup shredded sharp cheddar cheese

1/2 cup feta cheese, crumbled

1/2 cup all-purpose flour

2 large eggs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp paprika

Salt and pepper to taste

Olive oil, for frying

Prepare the Zucchini: In a large bowl, add the grated zucchini and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. Afterward, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.

    Mix the Ingredients: In the same bowl, combine the drained zucchini, sharp cheddar cheese, feta cheese, all-purpose flour, eggs, green onions, minced garlic, oregano, paprika, and season with salt and pepper. Mix until well combined.

      Form the Patties: Using your hands or a scoop, form the mixture into small patties, about 2-3 inches in diameter. Place them on a baking sheet lined with parchment paper.

        Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. Make sure the oil is hot but not smoking.
