Instructions
 

Prepare the Zucchini Pesto:

    - Begin by grating the zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or cheesecloth to ensure your pesto isn’t too watery.

      - In a food processor, combine the grated zucchini, fresh basil leaves, Parmesan cheese, walnuts (or pine nuts), minced garlic, salt, and pepper. Pulse until the mixture is well blended but still slightly chunky.

        - With the motor running, slowly drizzle in the olive oil until the pesto reaches a smooth and creamy consistency. Taste and adjust seasoning with more salt or pepper if needed.

          Toast the Bread:

            - Preheat your oven to 400°F (200°C) or use a grill pan if you prefer.
