1/4 cup granulated sugar

1/3 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Prep the zucchini: Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible. This step ensures the cookies are not overly moist.

      Combine dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

        Mix wet ingredients: In a large mixing bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until well combined. Add the egg and vanilla extract, beating until the mixture is smooth.

          Add zucchini: Fold in the grated zucchini, ensuring it is evenly distributed throughout the mixture.

            Combine mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. If desired, fold in the chocolate chips and chopped walnuts for added flavor and texture.

              Scoop the cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving enough space between each cookie for spreading.
