Zucchini Cookies Chicken Skillet

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 medium zucchini, grated

1 cup rolled oats

1/2 cup almond flour

1/4 cup brown sugar

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1 large egg

1 tsp vanilla extract

1/2 cup chocolate chips (optional)

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Prep the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes or until golden brown and cooked through. Remove from the skillet and set aside.

    Prepare the Zucchini Mixture: In a mixing bowl, combine the grated zucchini, rolled oats, almond flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Mix well to combine all the dry ingredients.

      Mix the Wet Ingredients: In another bowl, whisk together the applesauce, honey (or maple syrup), egg, and vanilla extract until smooth.

        Combine Ingredients: Pour the wet mixture into the dry mixture and stir until just combined. Fold in the chocolate chips, if using.

          Add Chicken Back to Skillet: Return the cooked chicken to the skillet, and create space in the center for the zucchini cookie mixture.

            Cook on the Stove: Pour the zucchini mixture around the chicken in the skillet, flatten slightly, and cook on medium-low heat for about 10-15 minutes, or until the bottom is golden and set. Use a spatula to carefully flip the mixture to cook evenly on both sides; add more olive oil as needed.

              Serve: Once both sides are golden brown, remove from heat. Let cool slightly, then garnish with fresh parsley if desired. Cut into wedges or scoop portions to serve warm.
