2 medium zucchinis, grated

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh cilantro (or parsley)

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil for frying

Sour cream or Greek yogurt for serving (optional)

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. Collecting the liquid helps the fritters hold together better.

    Mix the Batter: In a large mixing bowl, combine the grated zucchini, corn kernels, all-purpose flour, cornmeal, eggs, Parmesan cheese, fresh cilantro, baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir the mixture until everything is well combined, ensuring the dry ingredients are mixed evenly.

      Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. To check if the oil is hot enough, drop a tiny bit of the batter into the oil; it should sizzle immediately.
