3 medium zucchinis, grated

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 large eggs

1 cup almond flour (or regular flour for a non-keto version)

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil (for grilling)

Optional: fresh basil or parsley for garnish

Instructions
 

Prepare the Zucchini:

    - Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to avoid soggy crust.

      Mix the Zucchini Crust:

        - In a large mixing bowl, combine the drained grated zucchini, shredded mozzarella, Parmesan cheese, eggs, almond flour, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well until it forms a cohesive dough-like mixture.

          Form the Crust:

            - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Spread the zucchini mixture evenly onto the prepared baking sheet, forming a rectangle about ½ inch thick. Smooth the top with a spatula.

              Bake the Crust:

                - Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and firm. Allow to cool for about 10 minutes.

                  Create Grilled Cheese Squares:
