2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1 large egg

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

1 cup diced tomatoes

6 slices of crispy bacon, chopped

1 cup shredded lettuce (romaine or iceberg)

4 large flour tortillas or wraps

1/2 cup mayonnaise

1 tablespoon fresh lime juice

Chopped fresh herbs (basil or cilantro) for garnish

Instructions
 

Prepare the Zucchini Fritters:

    - In a large bowl, combine the grated zucchini with the salt. Let it sit for about 10 minutes to draw out moisture. Afterward, squeeze the zucchini with your hands or a clean kitchen towel to remove excess water.

      Mix the Fritter Batter:

        - In another bowl, combine squeezed zucchini, flour, grated Parmesan cheese, egg, garlic powder, black pepper, and cayenne pepper (if using). Mix until well combined.

          Cook the Fritters:

            - Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Using a spoon, drop tablespoons of the mixture into the skillet. Flatten slightly with the back of the spoon. Cook for about 3-4 minutes on each side until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.

              Prepare the BLT Ingredients:

                - While the fritters are cooking, chop the bacon, lettuce, and tomatoes. In a small bowl, mix the mayonnaise with lime juice to create a zesty spread.

                  Assemble the Wraps:

                    - Lay a tortilla flat on a clean surface. Spread a layer of the lime mayonnaise on the tortilla. Place 2-3 zucchini fritters in the center, followed by a layer of chopped bacon, diced tomatoes, and shredded lettuce.

                      Roll the Wraps:

                        - Gently fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Repeat with the remaining tortillas and ingredients.

                          Serve:

                            - Slice the wraps in half and arrange them on a platter. Garnish with fresh herbs for a pop of color. Serve immediately while the fritters are warm!
