3 medium zucchini

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a vegetable peeler or mandoline, slice the zucchini lengthwise into thin strips (about 1/8 inch thick). Sprinkle salt on the strips and let them sit for 10 minutes to help extract excess moisture. Pat dry with a paper towel.

    Make the Filling: In a medium bowl, combine the ricotta cheese, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, minced garlic, egg, oregano, basil, salt, and pepper. Mix until well combined.

      Assemble the Roll-Ups: Spread 1/4 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Take a zucchini strip, place 2 tablespoons of the cheese filling at one end, and carefully roll it up. Place the roll-up seam side down in the baking dish. Repeat with the remaining zucchini strips and filling.

        Add Sauce and Cheese: Once all roll-ups are placed in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top.

          Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Serve: Let the roll-ups cool for a few minutes. Garnish with fresh basil leaves if desired. Slice and serve warm.
