4 medium zucchinis

15 oz ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves (for garnish)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin strips. Lay them on paper towels, sprinkle with a little salt, and let them sit for 15 minutes to draw out excess moisture.

    Make the Filling: In a large mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella, Parmesan cheese, egg, dried oregano, garlic powder, salt, and black pepper. Mix until fully incorporated.

      Assemble the Rolls: Pat the zucchini strips dry with paper towels. Take a zucchini strip, place about 2 tablespoons of the ricotta mixture at one end, and roll it up tightly. Place the rolled zucchini seam-side down in a baking dish. Repeat with all zucchini strips and filling.

        Add Sauce: Pour a cup of marinara sauce evenly over the zucchini rolls, making sure to cover all the rolls. Sprinkle the remaining mozzarella cheese on top of the sauce.

          Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

            Garnish and Serve: Once removed from the oven, let the rolls cool slightly. Garnish with fresh basil leaves before serving.
