Zucchini Pita Pizzas

2 large zucchinis, sliced into thin rounds

4 whole wheat pitas

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup sliced black olives

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Zucchini: In a large mixing bowl, toss the sliced zucchini with olive oil, garlic powder, oregano, basil, salt, and pepper. Ensure the zucchini is well-coated.

      Bake the Zucchini: Spread the seasoned zucchini in a single layer on a baking sheet. Bake for about 10 minutes, or until they are slightly tender. Remove from the oven and set aside.

        Assemble the Pitas: On a clean baking sheet, place the whole wheat pitas. Spread about 1/4 cup of marinara sauce over each pita, leaving a little border.

          Top with Cheese: Sprinkle shredded mozzarella cheese evenly over the sauce on each pita, followed by the baked zucchini rounds and black olives. Finish by sprinkling Parmesan cheese on top.
