2 medium zucchinis, grated

1 cup yellow potatoes, peeled and grated

1/2 cup finely chopped onion

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup finely chopped fresh parsley (optional)

Cooking spray or oil for frying

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial to prevent soggy tater tots.

      Combine Ingredients: In a large mixing bowl, combine the grated zucchini, grated potatoes, chopped onion, cheddar cheese, flour, egg, garlic powder, onion powder, paprika, salt, pepper, and parsley (if using). Mix until all the ingredients are well combined into a thick batter.

        Shape the Tots: Using your hands, take small amounts of the mixture (about 1 tablespoon each) and shape them into small tater tots. Arrange them on the prepared baking sheet, leaving space between each tot.
